Tri-coloured frosting swirls (using the @wiltoncakes tri-colour piping set) are a perfect way to turn a classic vanilla cupcake into something fun and colourful!
Nothing says back to work treat more so than homemade cupcakes! Popcorn Cupcakes complete with toffee popcorn frosting and a caramel sauce drizzled on top - I love the way it's run down the edge!
So I've had one hour sleep because I was worried about not waking up for my flight home. Yes it's early. Yes I need coffee. Yes I've had an awesome time in the Baltics! The journey home begins - thank you Lithuania, Latvia, Estonia and Finland :)
At a UNESCO World Heritage site - Kernave Archaeological Site. Great place for a post-lunch walk! No one around but me. Bliss
At the Paneriai Memorial site - remembering the 100,000 people who were rounded up here by the Nazis and massacred. The bodies that were buried here were later dug up and burned as the Nazis tried to cover their tracks 😔
At the Hill of Crosses where Lithuanians have placed crosses since the 1800s as a sign of their faith and resolve against those who sought to destroy them. Over 200,000 crosses are estimated to be here. I've added mine to the collection hoping for a world of love, peace and hope ❤️
Last morning here in Riga and Latvia before the drive back down to Lithuania. Starting the morning with coffee and cake at the Laima coffee shop - Laima have been making chocolate and sweets here in Latvia since the 1870s ☕️ 🍫 🎂
After a busy day of castle exploring, hill climbing, forest walking, it's safe to say I deserve this Ghetto Burger! 🍔 the rhubarb and ginger lemonade is pretty good too!
When you get given a candle lit lantern and told you need it to explore the castle, I'm not quite sure what to expect!
There's something quite eerie about being the only person around exploring the ruins of Padise Monastery - the land around the monastery was granted in 1220 with the monastery built in 1317. Having seen its fair share of wars/changes in ownership/usage, the monastery was abandoned in 1766 following a fire caused by a lightning strike.
The Keila-Joa Falls - 3rd tallest waterfall in Estonia at only 6m but the widest at 30m! Beautiful :)
Can't decide on singing 'oh I do like to be beside the seaside' or 'do you wanna build a snowman'. Lovely walk along the beach at Võsu in the Lahemaa National Park.
Easter Sunday - the one day you have no need to justify why you're eating chocolate for breakfast. Happy Easter everyone! 😊

This is my FIRST coffee since giving it up for Lent on the 28th February, and what better way to enjoy it than a Starbucks abroad. I've had to go all the way to Helsinki for it (A) because Starbucks doesn't exist in Estonia, Latvia or Lithuania and B) any excuse for a new mug for the collection) but damn, it tastes so so good 😍 cheers @starbucks @starbucksstocka
